The problem with modern baking

Industrial bakeries discovered they could speed everything up with additives and high-speed mixers. A loaf that should take a day now takes ninety minutes. The texture mimics real bread, but the flavor? It's absent.

What happens when you give dough time

Long fermentation breaks down the proteins that make bread hard to digest. It develops organic acids that act as natural preservatives—our loaves stay fresh for five days without any chemicals added.

The crust caramelizes differently. Instead of uniform brown, you get variations: deep amber where it caught more heat, golden where steam kept it soft, blistered bubbles where gas escaped.

Each loaf is different because each is made by hand, shaped by someone who's done this ten thousand times but never the exact same way twice.

How to get your bread

We bake fresh every morning. Orders placed before 8 PM are ready the next day after 11 AM. You can pick up from our bakery in Copenhagen, or we can arrange delivery within the city center.
